Leaves loose colour when they lack pigments i.e. transfer of pigments to other leaves become yellow - a process of senescence. All the leaves kept in book remains their colour because they are only plucked but their pigments inside the leaves are there, so there is no senescence. Only the original shade become somewhat blackish after a long period it is the effect of plucking of leaf.
